Recycling

In my last post, I mentioned that the scones could be frozen. Well they are one of many things I love to have in the freezer. The one thing that is always in my freezer are these oatmeal cookies. See that pan below there? That is one of two. I double the recipe, freeze them and then throw them in a freezer bag and it's good to go. I also quite like freezing banana bread or muffins so that I can just turn the oven on and reheat them when I please. 
The main point of my speech here is that you should make these cookies. I mean if I am making them weekly then it has to be good! And they honestly taste better after they have been frozen and then baked so that the center of the cookies remain amazingly chewy and the outside has a nice crunch. And if you look carefully in the third row up, third from the right that is in fact an entire pecan. No need to chop in my books.
