The other night I was thinking about what to have for breakfast. Since I didn't have class the next morning, I had all the time in the world. Actually, I had to go shopping so more like I had a bit more time. Nobody would be home so I would just have to make some for myself which resulted in this creation. It literally tastes like banana bread. I even ate some of the batter it was that good.
Banana Bread Pancakes for one
3 tbsp flour
1 1/2 tbsp whole wheat flour
1/2 tsp flax seeds
1/4 tsp cinnamon
3/8 tsp baking powder
scant/just less than 1/8 tsp baking soda
1/4 cup mashed banana
1 tsp oil
1/4-1/2 tsp vanilla
1 egg white
2-3 tsp water
The night before in a little bowl, mix the dry ingredients together, cover and set aside. In the morning mashed up the banana. Add the banana, oil, vanilla and egg white to the dry ingredients. Mix until combined. Add 2-3 tsp of water so the batter is not as thick. I used 3. Heat a skillet on medium heat and spray lightly with non-stick cooking spray. Pour 1/4 cup scoops of the batter onto the heated skillet. Flip the pancakes when bubbles start to form on the surface. Cook them for about two minutes more or until they are golden. This makes 3 4-inch pancakes that are ridiculously fluffy and delicious. Eat with fresh sliced banana and some maple syrup!
